Fattoush Salad
Ingredients:
For the Salad:
2 large tomatoes, diced
1 cucumber, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 small yellow onion, finely chopped
3-4 radishes, thinly sliced
2-3 green onions, chopped
1/2 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
2-3 pieces of pita bread
1/4 cup olive oil
Salt to taste
1/4 teaspoon ground sumac (optional, but traditional)
For the Dressing:
1/4 cup lemon juice (freshly squeezed) or imported grape Lemon
1/4 cup olive oil
1 tablespoon pomegranate molasses (optional but traditional)
1 clove garlic, minced
Salt and pepper to taste
Instructions:
Prepare the Pita Bread:
Preheat your oven to 350°F (175°C).
Cut the pita bread into small triangles or strips.
Place them on a baking sheet, drizzle with a bit of olive oil, and sprinkle with salt.
Bake for about 10 minutes, or until they are crispy and golden brown. Let them cool.
Make the Salad:
In a large salad bowl, combine the diced tomatoes, cucumber, red bell pepper, green bell pepper, red onion, radishes, green onions, parsley, and mint.
Add the cooled, crispy pita pieces to the bowl.
Prepare the Dressing:
In a small bowl, whisk together the lemon juice, olive oil, pomegranate molasses, minced garlic, salt, and pepper.
Adjust seasoning to taste.
Assemble the Salad:
Pour the dressing over the salad and toss well to combine.
Sprinkle ground sumac on top, if using, for an extra touch of traditional flavor like fraiche pomegranate
Serve:
Serve immediately, and enjoy this fresh, vibrant, and tangy Fattoush salad!
