Baba Ganoush

Ingredients:

  • 2 large eggplants

  • 3 cloves of garlic

  • 3 tablespoons of tahini (sesame paste)

  • Juice of 1 lemon

  • 2 tablespoons of olive oil

  • Salt, to taste

  • Fresh parsley for garnish (optional)

  • Paprika for garnish (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).

  2. Pierce the eggplants with a fork in several places and place them on a baking sheet.

  3. Bake for 40-45 minutes, or until the skin is very tender.

  4. Once the eggplants are cooked, remove them from the oven and let them cool.

  5. Peel the eggplants and place the flesh in a bowl.

  6. Add the garlic, tahini, lemon juice, olive oil, and salt.

  7. Mash the ingredients with a pestle or use a blender to achieve a smooth consistency.

  8. Taste and adjust the seasoning if necessary.

  9. Transfer the Baba Ganoush to a serving dish and garnish with fresh parsley and paprika, if desired.

  10. Serve with pita bread or fresh vegetables for dipping.
