Ingredients:
2 large eggplants
3 cloves of garlic
3 tablespoons of tahini (sesame paste)
Juice of 1 lemon
2 tablespoons of olive oil
Salt, to taste
Fresh parsley for garnish (optional)
Paprika for garnish (optional)
Instructions:
Preheat your oven to 425°F (220°C).
Pierce the eggplants with a fork in several places and place them on a baking sheet.
Bake for 40-45 minutes, or until the skin is very tender.
Once the eggplants are cooked, remove them from the oven and let them cool.
Peel the eggplants and place the flesh in a bowl.
Add the garlic, tahini, lemon juice, olive oil, and salt.
Mash the ingredients with a pestle or use a blender to achieve a smooth consistency.
Taste and adjust the seasoning if necessary.
Transfer the Baba Ganoush to a serving dish and garnish with fresh parsley and paprika, if desired.
Serve with pita bread or fresh vegetables for dipping.
