Lebanese Homemade Soujouk Recipe

Ingredients:

  • 1 kg of ground beef (or a mix of beef and lamb)

  • 4 crushed garlic cloves

  • 2 tablespoons of salt

  • 2 tablespoons of sweet paprika

  • 1 tablespoon of ground cumin

  • 1 tablespoon of ground coriander

  • 1 teaspoon of ground black pepper

  • 1 teaspoon of Cayenne pepper (adjust to taste)

  • 1 teaspoon of ground fenugreek (optional)

  • 1/2 teaspoon of ground cinnamon (optional)

  • Natural casings for stuffing (optional)

Preparation:

  1. In a large bowl, mix the ground meat with the crushed garlic and all the spices until well combined.

  2. If using casings, clean them thoroughly and use a funnel to stuff the casings with the spiced meat mixture. Alternatively, form the mixture into sausages or meatballs.

  3. Allow the sausages to marinate in the refrigerator for at least 24 hours to develop the flavors.

  4. To cook, you can either pan-fry them or bake in the oven at 180°C (356°F) for about 20 minutes, until they are well cooked and golden brown
