Ingredients :
For the kebbeh dough:
1 cup fine bulgur
500 g minced meat (lamb, beef, or mixture)
1 medium onion, chopped
1 teaspoon of salt
1/2 teaspoon black pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon allspice (or ground allspice, optional)
For the stuffing:
1/2 cup ground meat
1/2 chopped onion
2 tablespoons pine nuts (optional)
Salt and pepper to taste
Instructions :
Preparing the kebbeh dough:
Soak the bulgur in hot water for 30 minutes. Drain it well.
In a blender, combine the drained bulgur, ground meat, onion, salt, black pepper, cinnamon and allspice (if using). Mix until you obtain a homogeneous and smooth paste.
Preparation of the stuffing:
In a pan, brown the minced meat and chopped onion until cooked through and golden brown.
Add the pine nuts (if using) and brown them lightly.
Season with salt and pepper to taste. Remove from heat.
Assembling the kebbeh fries:
Divide the kebbeh dough into two equal parts.
Spread half of the dough in an oiled baking dish to form an even layer.
Add the cooked stuffing to the dough layer.
Spread the second half of the kebbeh dough over the stuffing to form a top layer.
Cut the preparation into squares or diamonds to create the kebbeh “fries”.
Heat some cooking oil in a saucepan over medium heat.
When the oil is hot, fry the kebbeh fries until golden and crispy, about 4-5 minutes per side.
Remove the kebbeh fries from the oil and drain them on paper towels to remove excess oil.
Serve hot with mint yogurt sauce, tahini or garlic sauce.
